My kid loves french fries. I don't like deep-frying or the frozen alternative from the supermarket. We have found a way out of this dilemma: homemade french fries from the oven.

Homemade still tastes best and that is also the case with french fries. If the crispy sticks are then made with little fat in the oven, then you also have better control of how much fat and which ingredients are used and children are fun to help. For the fries I like to use floury potatoes such as Bientje. However, mainly waxy potatoes can also be used. The potatoes are peeled and sticks 0.8 to 1 cm thick are cut. If the pencils are too thin, there is a risk that they will burn too quickly in the oven. If you cut them too thick, they may be crispy on the outside but still raw on the inside.

Next, the potato sticks are placed in cold water to rinse off the excess starch. Slicing causes starch to leak out of the potato. If there is too much of it on the fries, it will prevent a crispy crust from forming. It is therefore important to briefly place the potato sticks in a bowl of cold water and then to dry them on a kitchen towel.

The prepared potato sticks are pre-cooked for crispy French fries from the oven. To do this, put the cut fries in boiling salted water for a few minutes. It is important that the pens are not cooked through. Then carefully dry the fries on a kitchen towel. Then mix them with a little oil in a bowl and put them on a baking sheet in the preheated oven for about 30 minutes at 160 degrees Celsius. Do not place too many French fries on the tray or on top of each other. The heat should brown them evenly on all sides. When the french fries are golden yellow and crispy, take them out of the oven and season them with a mixture of salt and a little paprika in a large bowl.
